Drew Marquis is kind of a big deal in the Northwest barbecue scene. The Oklahoma-born, Tuscany-trained chef and butcher earned a (literally) ravenous fan base in Seattle with his Bootleg Barbecue pop-up, launched in 2020. Unfortunately for the city, Marquis moved down to Oregon in 2021, where he runs Texas-style Grasslands Barbecue, which our buddies at Eater Portland call “easily the best barbecue in the Gorge.”
Fortunately for the meat-eating populace of the Seattle metropolitan area, Marquis occasionally returns to his old stomping grounds and will be back again this weekend, March 10 to 12, at Holy Mountain Brewing, where Marquis held the majority of his events. (The brewery
