Brothers Akarawin and Jakkapat Lertsirisin specialize in single-dish restaurants. Now they’re expanding this approach to okonomiyaki, and while Jiban-Ya is still working on getting the cooking times dialed in, the savory griddled pancakes are bursting with balanced flavors and delightful textural contrasts. The portion sizes are heroic, especially given the richness of the stuffed and sauce-drenched pancakes, so one is probably sufficient split between two people, especially if you throw in an order of mouth-tingling, funky mala koji duck breast and tangy shime saba (cured mackerel).
